Pea and Pineapple Salad Recipe
This Pea and Pineapple Salad also has carrots and fruit is a nice way to get the kids to eat their veggies. You can also replace the carrots with mixed vegetables for more variety.
Servings 4 people
- 1 cup Peas cooked
- 1 cup Carrots
- 1/2 cup Mayonnaise
- 3 Lettuce Leaves Shredded
- 1/2 cup Pineapple pieces
- 1/2 cup Apple chopped
- Salt & Pepper to Taste
Cooked the carrots till tender but not soft.
It must still have some crunch.
Mix green peas, carrots, pineapple pieces and chopped apple.
Add mayonnaise, salt and pepper.
Put a bed of lettuce on a flat dish.
Heap the vegetable mixture on top.
Sprinkle with some sliced almonds.
Chill and serve
