Baked Passion Fruit Custard Recipe

This is a nice dessert when you feel like something sweet after a big meal. It takes no time to prepare and it can bake while you are enjoying your main meal.

Ingredients

  • 4 Eggs large
  • 4 tbsp Castor Sugar
  • 1 Passion Fruit tin
  • 2/3 cup Coconut Milk
  • Pinch of Salt

Instructions

  • Preheat the oven to 180°C.
  • Beat together eggs, castor sugar, coconut milk and salt until smooth. 
  • Pour into 4 ramekins.
  • Divide the passion fruit between the four ramekins. 
  • Place ramekins in a deep roasting tin.
  • Fill the the roasting tin with boiling water to three-quarter of the way up the side of the ramekins.
  • Bake the custard for 40 minutes.
  • Serve with remaining passion fruit and cream over the top.
