Ingredients

4tbspCastor Sugar
1Passion Fruit tin
2/3cupCoconut Milk
Pinch of Salt
Instructions
Preheat the oven to 180°C.
Beat together eggs, castor sugar, coconut milk and salt until smooth.
Pour into 4 ramekins.
Divide the passion fruit between the four ramekins.
Place ramekins in a deep roasting tin.
Fill the the roasting tin with boiling water to three-quarter of the way up the side of the ramekins.
Bake the custard for 40 minutes.
Serve with remaining passion fruit and cream over the top.
