Pasta & Green Bean

A very tasty dish filled with crunchy walnuts, beans and pasta. It is quick to prepare and very nutritious.

Ingredients

  • 1 cup Walnuts
  • 1 tbls Margarine
  • 6-8 stems Spring Onions
  • 1 bunch Parsley
  • 2 cloves Garlic chopped
  • 1/2 cup Vegetable Stock
  • 1/2 cup Soya Cream
  • 2 cups Pasta
  • 1 cup Green Beans trimmed & halved

Instructions

  • Roast the walnuts in a frying pan over medium heat for 2-3 minutes, stirring all the time.
  • Set aside to cool.
  • Melt margarine in a saucepan add the spring onions, garlic and parsley, cook for 2 minutes.
  • Add stock and cook over medium heat for 7 minutes.
  • Stir in Soya Cream, cook for 5 minutes.
  • Taste for seasoning.
  • Bring a large pan of water to the boil add salt. 
  • Drop in the pasta and cook according to packet instructions.
