Easter Chick Cupcakes Recipe

These Easter Chicks are fairly easy and fun to make. An excellent idea for when family and friends come round for Easter. You want to get the kids to join in the fun of making them and then eating them afterwards. They will love it!

Servings 12 chicks

Ingredients

  • 1/2 cup Margarine
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Essence
  • Pinch of Salt
  • 48 M&M's or Smarties
  • 1 1/2 cups Self-Raising Flour
  • 1/2 cup Milk
  • 1 1/2 cups Shredded Coconut
  • 24 Currents
  • 12 Whole Almonds

Butter Icing

  • 1/2 cup Margarine
  • 1 tsp Vanilla Essence
  • 2 cups Icing Sugar
  • 1/4 cup Milk

Instructions

Cupcake Mixture

  • Preheat the oven to 180°C.
  • Line a muffin pan with paper cases. 
  • Beat margarine and sugar together.
  • Add eggs. 
  • Beat again then add the self-raising flour and salt. 
  • Add milk and vanilla essence.
  • Mix.
  • Places mixture in prepared holes.
  • Bake 20 minutes. 
  • Let cool in tray then transfer to a cooling rack. 

Icing and Decoration of the Cupcakes

  • Beat margarine, icing sugar and vanilla together.
  • Add milk and continue to beat until combined. 
  • Add a few drops of yellow food coloring. 
  • Put coconut into a resealable storage bag. 
  • Add a few drop of yellow food coloring. 
  • Shake and rub to color the coconut.
  • Remove paper cases from cakes. 
  • Level tops of cakes, turn cakes upside down and spread with butter icing. 
  • Make a dome on the one side for the head. 
  • Coat with coconut. 
  • Use an almond for the beak. 
  • Two M&M's for the comb and two for the feet. 
  • Two currents for the eyes.
